  1. Wash your rice thoroughly and drain, heat up a frying pan or pot and pour rice into it and stir fry continuously
  2. Fry till it’s dry, you can stop frying once you notice some brown burnt color or you can allow it brown a bit, I like mine a bit brown. This roasting process should take you less than 10mins. Remove from heat and set aside once it’s ready
  3. Open you coconut milk tin, and in another bowl dissolve your coconut milk powder using little water.
  4. Pour in coconut oil, once it’s hot, add blended pepper, onion, garlic and ginger mix and stir
  5. Add in salt, knorr cube, bay leaf then stir
  6. Add your dry prawns, dry fish and crayfish, stir in the coconut milk and meat stock if you have any available
  7. Cover the pot and allow it cook for a minute or 2 or once it’s starts boiling. Pour in your toasted rice
  8. Stir and adjust ingredients if necessary, reduce heat to the lowest and cover pot with either foil, clean nylon or baking sheet then place the cover over it to cook with the steam
  9. You would need to add water and adjust ingredients if necessary, add water if your rice is still hard, for this particular measurement I used exactly 2 sachet of pure water after it dried up the first time, but you had to add it little by little till your rice is soft. Because the rice was toasted it won’t get soggy.
  10. Once your rice is tender and the water is dried up turn off heat and serve
  11. Enjoy with fried chicken 🍗
