  9. 2 tsp ghee

  12. 1 tsp saunf/ Fennel seeds
  13. 2 bay leaf
  14. 1 star anise
  15. 3 cloves
  16. 1 inch cinnamon stick
  17. 2 green cardamom
  18. 1 black cardamom
  19. 2 Marathi moggu
  20. 1 stone flower

Instructions to make Coconut Milk Rice

  1. Wash and soak basmati rice for 30 minutes. Take grated coconut in mixer jar, add water and extract coconut milk. Take coconut residue in mixer jar along with water and extract coconut milk again. Approximately it yields 1&1/2 cup coconut milk. Take extra 1&1/2 cup water for 1&1/2 cup rice.
  2. In a pressure cooker heat oil. Add cashews and fry until golden. Add in whole spices and sauté for 30 seconds until aromatic.
  3. Add in sliced onions and slit green chili. Sauté for a minute. Add ginger garlic paste and sauté until raw smell goes away.
  4. Add in soaked and drained basmati rice and sauté for a minute. Add in coconut milk, water and salt.
  5. Once it comes to boil. Close with pressure cooker lid and pressure cook for 1 whistle and switch off the flame. Wait until pressure settles down.
  6. Open the lid, add in ghee, chopped coriander and mint leaves. Gently fluff up the rice.
