- 1 beetroot,peeled,grated,
- 2 cup Curd,whisked well and lumps removed
- 1/4 cup coconut grated
- 3 green chillies
- 1 tbspn mustard seeds
- 2 springs curry leaves
- 2 dry red chilli
- 1 tbsp Sugar
- Salt as required
- 2 tbspn Oil
Instructions to make Beetroot with coconut and curd
- Grind coconut,half of the mustard,green chilli and few curry leaves into fine paste.use curd to grind the same instead of water
- Transfer the coconut paste to a bowl.add the whisked curd and mix well.I used a blender and added the curd.keep this aside.
- In a pan heat 2 tablespoon of oil,and add remaining mustard seeds and allow to splutter.add red chillies split to pieces and add curry leaves.now add the grated beetroot and salt as required and sauté well till it’s well done.cook in Low to medium heat.I sautéed till it’s dry and bit crispy.
- Transfer the cooked beetroot to a bowl.now add in the coconut,curd mixture and a table spoon of sugar.mix well
- Transfer to serving bowl and add few fresh curry leaves..this was my dish for rice today apart from stir fries and teriyaki chicken.
