- 3/4 cup all-purpose flour
- 3 tbsp coconut grated
- 2 tbsp semolina
- 1 ripe banana
- 2 tbsp curd
- 1/4 cup milk
- 4 tbsp milk powder
- to taste sugar
- 1 cup water
- 1 tbsp fennel seeds
- as needed crushed nuts(Almonds, cashew,Walnuts)
- 2 cardamoms crushed
- 1/4 tsp baking powder
- 1 pinch salt
- As needed oil or ghee for frying
Steps to make Banana Coconut Malpua or Pancake
- To make sugar syrup, add water and sugar in a pan or wok. Boil till sugar dissolves and reaches 1 string consistency.Add crushed cardamoms and simmer for few minutes.Few strands of saffron may be added to make it more flavourful. Set aside.


- In a bowl add the flour,grated coconut,mashed banana,pinch of salt,semolina,curd,baking powder,raisins,crushed cardamoms and fennel seeds.Gradually add milk to make a thick batter of pouring consistency and whisk well to get a lump free texture.Cover and allow it to rest for 20 minutes.


- Heat oil or ghee in a frying pan and pour a ladle full of batter and deep fry round pancakes in medium flame.Flip the malpua once one side is golden brown.


- Remove from oil and dip the malpuas in warm sugar syrup.Let it soak for 10 minutes then spread it on a plate.Drizzle some sugar syrup over them and serve garnished with chopped nuts or rabri.
